Imagine the aroma filling your kitchen as the beef slowly simmers in a flavorful marinade, promising a meal that’s both satisfying and memorable.

Ingredients

  • 3 pounds (48 oz) beef
  • 1 beef stock concentrate (or 1 Knorr Beef Cube)
  • 8 oz tomato puree
  • 3 cups water
  • 6 tablespoons soy sauce
  • 1 tablespoon white wine vinegar
  • 2 tablespoons black pepper
  • 4 bay leaves
  • 1/2 lemon (for juice)
  • 2 tablespoons tomato sauce
  • 3 tablespoons butter
  • 1/2 cup olive oil
  • 1 chopped onion
  • 4 cloves garlic
  • 2 large potatoes, sliced for frying
  • 2 carrots, sliced for frying

Step-by-step

  1. Combine the beef, crushed black pepper, soy sauce, vinegar, dried bay leaves, lemon juice, and tomato sauce in a bowl. Mix well to coat the beef thoroughly. Marinate for at least 30 minutes to develop deep flavor.
  2. Transfer the marinated beef and all remaining marinade into a large cooking pot. Add the water and bring to a boil.
  3. Drop in the beef stock concentrate (or cube) and stir until dissolved. Cover the pot and let the beef simmer on low heat for 40 minutes, allowing the flavors to meld and the beef to become tender.
  4. Turn the beef pieces over, then stir in the tomato puree. Continue cooking until the beef is very tender. Remove from heat and set aside.
  5. While the beef is cooking, heat olive oil in a frying pan. Fry the sliced potatoes until golden and crispy on both sides. Remove and drain on paper towels. Repeat with the sliced carrots.
  6. In the same pan, save about 3 tablespoons of the oil used for frying the potatoes. Sauté the chopped onion and garlic until the onion softens and becomes fragrant.
  7. Pour the beef stew sauce into the pan with the sautéed onion and garlic. Bring to a boil, then add the cooked beef. Cook together for 2 minutes to marry the flavors.
  8. Add the butter and stir until melted. Continue cooking until the sauce reduces by half and thickens, coating the beef beautifully.
