Few comfort foods evoke warmth and nostalgia quite like a hearty beef stroganoff. This classic Russian dish has traveled across borders, charming palates with its creamy sauce and tender beef. Imagine succulent bites of fillet, enveloped in a velvety mushroom and onion gravy, served over your favorite noodles or rice. It’s a dish that turns an ordinary evening into a special occasion, offering both richness and a touch of elegance in every bite.

Ingredients

  • 1 tablespoon olive oil (about 0.5 fl oz)
  • 1 large onion, sliced
  • 1 clove garlic, crushed
  • 1 tablespoon butter (0.5 oz)
  • 8 oz (225 g) mushrooms, sliced
  • 1 lb (500 g) beef fillet, cut into strips
  • 1 tablespoon plain flour (0.5 oz)
  • 5 oz (150 g) crème fraîche
  • 1 tablespoon English mustard
  • 3.4 fl oz (100 ml) beef stock
  • Fresh parsley, chopped, for garnish

Step-by-step

  1. Heat the olive oil in a non-stick frying pan over medium heat. Add the sliced onion and cook, stirring occasionally, until completely softened—about 15 minutes. If sticking occurs, splash in a little water.
  2. Crush in the garlic and cook for an additional 2–3 minutes until fragrant. Add the butter and let it foam.
  3. Add the mushrooms to the pan and cook for about 5 minutes until they are soft and browned. Season with salt and pepper, then transfer the mixture to a plate.
  4. Place the flour in a bowl with a generous pinch of salt and pepper. Toss the beef strips in the seasoned flour until well coated.
  5. Add a splash of oil to the pan if needed and cook the beef in batches over medium-high heat for 3–4 minutes until well browned. Return all the beef to the pan.
  6. Return the cooked onion and mushroom mixture to the pan with the beef.
  7. In a small bowl, whisk together the crème fraîche, mustard, and beef stock. Pour this sauce into the pan with the beef and vegetables.
  8. Cook everything together over medium heat for about 5 minutes until heated through and slightly thickened.
  9. Garnish with freshly chopped parsley. Serve hot over cooked pappardelle, rice, or your preferred accompaniment.
