Imagine a warm, sunny afternoon where the air is filled with the aroma of baked goods and citrus. Its rich yet-refreshing flavor makes it an irresistible treat for celebrations or a cozy weekend dessert. Every spoonful tells a story of comfort, elegance, and vibrant freshness.

Ingredients

  • 3 1/4 cups (100 g) Digestive Biscuits
  • 3 oz (85 g) Almonds
  • 5 1/2 tablespoons (85 g) Butter
  • 1 cup (250 ml) Greek Yogurt
  • 1 2/3 cups (750 g) Mascarpone
  • 2 Eggs
  • Zest of 1 Lemon
  • Zest of 1 Orange
  • 1 cup (250 ml) Honey
  • Fruit Mix (to serve)

Step-by-step

  1. Preheat your oven to 320°F (160°C). Crush the biscuits and most of the almonds in a plastic food bag using a rolling pin until fine. Mix the crushed biscuits and almonds with the melted butter, then press this mixture firmly into the bottom of a deep, oval 9-inch (23 cm) dish, or similar-sized baking dish. Bake for 10 minutes until crisp and set aside.
  2. In a bowl, stir or mash together the Greek yogurt and mascarpone until smooth and creamy. Whisk in the eggs, one at a time, until fully incorporated.
  3. Add the lemon and orange zests to the mixture, then stir in most of the honey, saving about 3 tablespoons for later.
  4. Spread the filling evenly over the cooled biscuit base. Cover loosely with foil and bake for 1 hour. Afterward, remove the foil and bake for an additional 15 minutes until the top is lightly golden and the center has just a slight wobble.
  5. Let the cheesecake cool completely, then refrigerate for up to 2 days before serving.
  6. To serve, sprinkle with the remaining almonds, drizzle with the reserved honey, and serve alongside a fresh fruit mix for a burst of natural sweetness.

Chef’s tips & serving ideas
