  • 2.5 lbs (1.2 kg) chicken, cut into pieces
  • 5 thinly sliced onions
  • 2 finely chopped tomatoes
  • 8 cloves garlic, chopped
  • 1 tbsp ginger paste
  • ¼ cup vegetable oil (2 fl oz)
  • 2 tsp cumin seeds
  • 3 tsp coriander seeds
  • 1 tsp turmeric powder
  • 1 tsp chili powder
  • 2 green chilies, chopped
  • 1 cup yogurt (8 fl oz)
  • ¾ cup cream (6 fl oz)
  • 3 tsp dried fenugreek leaves (kasuri methi)
  • 1 tsp garam masala
  • Salt, to taste

Step-by-step

  1. Take a large pot or wok, big enough to cook all the chicken, and heat the oil in it. Once hot, add the sliced onions and fry until they turn deep golden brown. Remove and set aside on a plate.
  2. In the same pot, add the chopped garlic and sauté for about 1 minute until fragrant.
  3. Add the chopped tomatoes and cook for approximately 5 minutes, stirring occasionally, until they soften and break down.
  4. Return the fried onions to the pot and stir well. Add the ginger paste and cook for another minute.
